Edamame


Has anyone ever had edamame out there? I don't really know how to spell it, but I think that is right. Well, my friend introduced me to it when we went to Costco one time. She bought a huge bag of frozen edamame and she gave me a package to try at home. Well, I loved it! It is so yummy. So we went to Sam's Club yesterday and they had the same huge bag in the freezer section. So I bought some. And it is a hit! I love it, Sadie likes it, and Rob loves it. Zac kinda tries to eat it too, but they aren't super soft, so it is hard for him. Anyway, you should all go try some. It is yummy...and healthy too!

I always wanted to try it but didn't know how to "fix" it. Now I have an expert on hand to help me with it.

Really? I bought some one time and Evan and I had to force ourselves to eat it. Maybe I just prepared it wrong. How do you guys eat it?

Maybe I am just weird...I like to just eat it plain. I put the frozen package in the microwave for about 3 minutes and then I just pop them out of the pods and eat it. So yummy. Although I do remember trying it before and not liking it cold. I think it tastes better warm...but I like it both ways now. Is that weird?

Hey I just was reading a recipe with that. Didn't have a clue what it was. Looks like a GREEN veggie to me. Should be good for us!!!

I've got a great recipe that calls for them NOT plain. It's called Yumm Sauce. It has all kinds of interesting ingredients, but once you pour it on top of rice, black beans and tomatoes, it's delicious!

YUMM SAUCE:
1/2 cup oil
1/2 cup almonds
1/3 cup brewers yeast
1/3 cup garbonzo beans - drained (I used closer to 1/2 cup)
1/4 cup soybeans (this is the edamame)
1/2 cup water
1/2 cup lemon juice
2 garlic cloves
1/2 tsp salt
1 tsp curry powder

Blend nuts, beans and oil in food processor. Then blend in yeast and liquids one at a time. Puree until smooth. Then put it over your bowl of rice and beans, tomatoes, and really any other veggie you want. It's from a place in Eugene that my dad told me about. http://www.cafeyumm.com/
